Pack Snacks and Make Tracks… with delicious Trail Cookies!

What is a Trail Cookie? Well, think granola bar meets oatmeal cookie and you’re pretty much there! This recipe doesn’t require any flour (so should be gluten free if your oats are!) and is fully customizable. You can change up the “bits” to whatever you’re feeling. Don’t like raisins? Sub in dried cranberries or dried blueberries. Not into sunflower seeds? Try some pepitas or slivered almonds. You could even replace the chocolate chips with something else, if you really wanted. So make up a batch and I’ll see you on the trail!

Trail Cookies


Ingredients

1/2 cup butter

1 cup peanut butter

1/2 cup sugar

1/2 cup brown sugar

2 eggs

1 tsp vanilla

3 cups old-fashioned oats

1 1/2 tsp baking soda

2 cups of bits: I used 1 cup of raisins, 1/2 cup mini chocolate chips, and 1/2 cup sunflower seeds in these photos. But I’ve also used dried cranberries, dried blueberries, pepitas, and slivered almonds in the past, so you can really make this part your own!

Directions

Preheat your oven to 350° F.

Beat butter, peanut butter, brown sugar, and sugar until smooth.

Adds eggs and vanilla. Beat until combined.

Add oats and baking soda. Mix on low until combined.

Stir in all the bits.

Drop scoops of dough a few inches apart on a cookie sheet. Slightly flatten the tops.

Bake for 10-12 minutes. Let cool for 5 minutes on the sheet. The rest time is important, so don’t skip it! They tend to fall to pieces when you don’t give them their nap.
