Green Bean Casserole - The Xperimentalist Remix

Green bean casserole is iconic holiday fare. Some people love it. Some people don’t. Personally, I’m a big fan of the original. Cream of mushroom soup and I go way back. Used to mix a can with some plain white rice to make a quick meal in college.

But along came some new dietary restrictions, and changes needed to be made. My partner and I started playing around with the ingredients and exploring the possibilities. Then we stumbled upon a recipe for a mushroom stroganoff and we thought, “What if….”

And we came up with this: Green Bean Casserole - The Remix.

Green Bean Casserole - The Xperimentalist Remix


Ingredients

3 tablespoons unsalted butter

8 oz sliced mushrooms (button or baby portabella mushrooms work great)

1 tablespoon all-purpose flour (or gluten free all-purpose flour)

14 oz broth of choice (we usually use chicken, but use what you like)

8 oz sour cream

4 oz goat cheese

1 can of French Fried Onions (if you’re making your own, you’ll probably want about 2 cups worth)

2 cans of French style green beans, drained


Directions

Melt butter in a saute pan over medium-high heat. Increase the heat to high, then add mushrooms (and a pinch of salt if you like). Saute until the mushrooms darken in color and soften, about 7 to 10 minutes.

Sprinkle flour into the pan and stir to combine. Cook until the flour has absorbed much of the liquid from the mushrooms and turned a dark brown, should only take about 1 minute or so. Pour in the broth to deglaze the pan.

Bring to a simmer and decrease the heat to a medium-low. Cook for 10-12 minutes.

Add sour cream, goat cheese, 1 cup of the French Fried Onions, (and black pepper to taste if you like). Stir to combine, cover so that some steam can still escape, and simmer another 2 to 4 minutes.

Remove from heat and stir in both cans of green beans. Pour this mixture into a casserole dish. Top with the remaining French Fried Onions (or just as many as you like).

Place the casserole into an oven set to broil. About 2 to 3 minutes under broil should make the onions nice and crispy.

Serve immediately.
